Ingredients : 1.5 lbs beef stew meat, cubed
1 large onion, chopped
2 carrots, sliced
2 medium potatoes, diced
1 sweet potato, peeled & cubed
1 can (14 oz) diced tomatoes
3 garlic cloves, minced
2 tsp dried thyme
1 bay leaf
Salt & pepper to taste
4 cups beef broth
1 cup frozen peas (optional, for extra color!)

❶ Heat a drizzle of oil in a large pot over medium heat. Brown the beef cubes on all sides. Remove and set aside.
❷ In the same pot, sauté onions and garlic until fragrant. Add the dried thyme and stir for 1 minute.
❸ Pour in the beef broth, diced tomatoes, and bay leaf. Stir to combine. Return the beef to the pot and bring to a gentle boil.
❹ Add carrots, potatoes, and sweet potatoes. Lower the heat, cover, and simmer for 1 hour or until the beef is tender and veggies are soft.
❺ Taste and adjust salt and pepper. Stir in frozen peas during the last 5 minutes for a pop of color. Remove the bay leaf before serving.
