🧄🧀 Cheddar Cauliflower & Roasted Garlic Soup – Creamy, Cozy & Loaded with Flavor! 🥣🌿

(Prep: 10 mins | Cook: 35 mins | Serves: 4–6)
🛒 Ingredients:
1 large head cauliflower, cut into florets
1 whole garlic bulb
1 tbsp olive oil
1 small onion, chopped
4 cups vegetable or chicken broth
1 cup shredded sharp cheddar cheese
½ cup heavy cream (or milk for lighter version)
Salt & pepper, to taste
Optional: croutons, extra cheese, or chives for garnish
👩‍🍳 Instructions:
1️⃣ Preheat oven to 400°F (200°C). Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30–35 minutes until soft and golden.
2️⃣ Meanwhile, sauté chopped onion in a pot until soft. Add cauliflower and broth. Simmer until cauliflower is tender, about 15–20 minutes.
3️⃣ Squeeze roasted garlic cloves into the pot.
4️⃣ Use an immersion blender (or regular blender in batches) to blend until smooth.
5️⃣ Stir in cheddar cheese and cream. Season with salt and pepper to taste.
6️⃣ Simmer for a few more minutes until warmed through and melty.
7️⃣ Serve hot with your favorite toppings!
