Mexican White Trash Casserole
Ingredients:
– 1 bag Nacho Doritos, crushed
– 2 cups shredded chicken or ground beef
– 2 cups shredded cheese (plus more for topping if desired)
– 1 can (10.75 oz) cream of chicken soup
– 1 can Rotel tomatoes, undrained
– 1/2 cup sour cream
– 1/2 cup milk
– 1/2 package taco seasoning (adjust to taste)
Directions:
1. Preheat your oven to 350°F (175°C) and spray a 2-quart casserole dish with nonstick cooking spray.
2. In a large bowl, mix shredded chicken or beef, 1 cup cheese, cream of chicken soup, Rotel tomatoes, sour cream, milk, and taco seasoning until well combined.
3. Spread half of the crushed Doritos on the bottom of the casserole dish. Layer half of the meat mixture on top. Repeat the layers.
4. Sprinkle additional cheese on top for a cheesy crust if desired.
5. Cover the dish with aluminum foil and bake in the preheated oven for 35 minutes. If doubling the recipe or using a larger pan, bake for 45 minutes.
6. Once baked, remove from the oven, let it rest for a few minutes, then serve warm.
Notes:
For added flavor, consider topping with sliced jalapeños or diced avocado before serving.
