Strawberry Lemon Layer Cake
Ingredients:
2 ½ cups flour
2 ½ tsp baking powder
½ tsp salt
1 cup unsalted butter, softened
2 cups sugar
4 eggs
1 tbsp lemon zest
¼ cup lemon juice
1 cup buttermilk
½ cup strawberry puree Lemon Buttercream:
1 cup unsalted butter, softened
4 cups powdered sugar
2 tbsp lemon juice
1 tsp vanilla extract
2 tbsp heavy cream Instructions:
Preheat oven to 350°F (175°C). Grease and flour 3 cake pans.
Whisk flour, baking powder, and salt. Set aside.
Beat butter and sugar until fluffy. Add eggs one at a time, then mix in lemon zest and juice.
Alternate adding dry ingredients and buttermilk, mixing until smooth.
Divide batter into two bowls. Mix strawberry puree into one for a pink layer.
Pour batter into pans and bake for 25-30 minutes. Cool completely.
For buttercream, beat butter, powdered sugar, lemon juice, vanilla, and cream until smooth.
Layer cakes, alternating lemon and strawberry, with buttercream between. Frost the outside and decorate as desired!
