Soft and Chewy Chocolate-Stuffed M&M Cookies
Ingredients:
– ½ cup unsalted butter, softened
– ½ cup brown sugar
– ¼ cup granulated sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 1 ½ cups all-purpose flour
– ½ teaspoon baking soda
– ¼ teaspoon salt
– ½ cup chocolate chips
– ½ cup mini M&M candies, plus extra for topping
– ½ cup chocolate spread (such as hazelnut spread or melted chocolate)
Directions:
1. Line a baking sheet with parchment paper. Scoop small spoonfuls of chocolate spread onto the sheet and freeze for about 30 minutes until firm.
2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
3. Beat in the egg and vanilla extract until well combined.
4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
5. Fold in the chocolate chips and M&M candies.
6. Scoop out about 2 tablespoons of dough and flatten it slightly. Place a frozen chocolate spread piece in the center and wrap the dough around it, sealing the edges. Roll into a smooth ball and place on the baking sheet. Repeat with the remaining dough.
7. Press a few extra M&M candies on top of each cookie for decoration.
8. Chill the dough balls in the refrigerator for 20 minutes to prevent spreading. Meanwhile, preheat the oven to 350°F (175°C).
9. Bake the cookies for 10-12 minutes or until the edges are lightly golden but the centers remain soft.
10. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy warm for a gooey chocolate center!
