Ingredients:
For the Meatballs:
1 lb ground chickenย
1/2 cup ricotta cheeseย
1/4 cup grated Parmesanย
1 eggย
1/2 cup breadcrumbsย
2 cloves garlic, mincedย
Salt and pepperย
1 tbsp Italian seasoningย
For the Spinach Alfredo Sauce:
2 tbsp butterย
1 clove garlic, mincedย
1 cup heavy creamย
1/2 cup grated Parmesanย
2 cups fresh spinachย
Salt and pepperย
Additional:
Pasta, ready to serveย
Directions:
Preheat oven to 400ยฐF (200ยฐC).
Combine meatball ingredients and form into small balls.
Place on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown.
For the sauce, melt butter over medium heat, add garlic and cook until fragrant. Add cream and Parmesan, simmer until thickened, then stir in spinach until wilted.
