Chocolate Caramel Delight

Ingredients

For the Crust:
1 cup graham cracker crumbs
2 tbsp sugar
4 tbsp melted butter

For the Cheesecake Filling:
8 oz cream cheese (softened)
1 cup powdered sugar
1 tsp vanilla extract
½ cup heavy cream

For the Caramel Sauce:
½ cup caramel sauce
2 tbsp heavy cream

For the Chocolate Topping:
½ cup semi-sweet chocolate chips
2 tbsp heavy cream

Instructions

1️⃣ Prepare the crust: Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into the bottoms of mini muffin tins or silicone molds. Chill in the fridge for 10-15 minutes.

2️⃣ Make the cheesecake filling: Beat softened cream cheese, powdered sugar, and vanilla extract until smooth. Whip the heavy cream in a separate bowl until stiff peaks form, then gently fold it into the cream cheese mixture. Spoon the filling into the chilled crusts, smoothing the tops. Chill for at least 2 hours.

3️⃣ Prepare the caramel sauce: Warm caramel sauce and heavy cream together in a small saucepan over low heat, stirring until smooth. Let it cool slightly before drizzling over the cheesecake bites.

4️⃣ Make the chocolate topping: Melt the chocolate chips and heavy cream together in the microwave (in 20-second intervals), stirring until smooth. Drizzle the melted chocolate over the caramel layer.

5️⃣ Chill and serve: Refrigerate the cheesecake bites for at least 30 minutes before serving. Enjoy these creamy, indulgent treats!
