Catch A Husband Cake
Ingredients:
1 can (20 oz) crushed pineapple with juice
2 cups granulated sugar
2 cups all-purpose flour
2 tsp baking soda
2 large eggs
1 cup chopped walnuts or pecans (optional)
For the Icing:
1 package (8 oz) cream cheese, softened
1/2 cup butter, softened
1 tsp vanilla extract
2 cups powdered sugar
1 cup shredded coconut
1/2 cup chopped pecans or walnuts
Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a large mixing bowl, combine the crushed pineapple (with its juice), granulated sugar, flour, baking soda, and eggs. Mix well until all ingredients are thoroughly combined. Stir in the chopped nuts if using.
Pour the batter into the prepared baking pan and smooth the top with a spatula.
Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
