Dive into this creamy and dreamy dessert that balances the rich flavors of butterscotch with a crunchy graham cracker crust! Perfect for any sweet tooth craving! 😋❤️

Ingredients:
– 2 cups graham cracker crumbs
– 16 oz (2 packages) cream cheese, softened
– 1/4 cup sour cream
– 1/2 cup butterscotch chips
– 1/2 cup granulated sugar (divided into 1/4 cup and 1/2 cup)
– 2 large eggs
– 2 tablespoons heavy cream
– 1/2 cup unsalted butter, melted
– 1 teaspoon vanilla extract

Instructions:
1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper for easy removal.

2. In a medium-sized bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Stir well until the mixture is fully combined and resembles wet sand.

3. Press this crumb mixture firmly into the bottom of your prepared baking pan to create a solid crust.

4. Place the crust in the oven and bake for 8-10 minutes, or until just golden. Once baked, allow it to cool completely in the pan.

5. While the crust cools, prepare the cheesecake filling. In a large mixing bowl, beat the softened cream cheese with 1/2 cup of granulated sugar using an electric mixer until smooth and creamy.

6. Add the eggs one at a time, mixing well after each addition to incorporate fully.

7. Mix in the vanilla extract and sour cream until the batter is smooth and homogeneous.

8. Once the crust has cooled, pour the cheesecake batter over the crust and spread it evenly with a spatula.

9. Bake the cheesecake in the preheated oven for 25-30 minutes. The cheesecake is done when the center is set with a slight jiggle.

10. After baking, let the cheesecake cool to room temperature before transferring it to the refrigerator. Chill for at least 2 hours to allow it to firm up properly.

11. To make the butterscotch topping, add the butterscotch chips and heavy cream to a small saucepan over low heat. Stir continuously until the chips melt and the mixture is smooth.

12. Once the cheesecake is chilled, drizzle the butterscotch sauce generously over the top.

13. Cut into squares and serve cold. For an extra touch, feel free to sprinkle some additional graham cracker crumbs or butterscotch chips on top.
