Cheesy Jalapeño Meatloaf
Ingredients:
2 lbs (900g) ground beef
1 cup (100g) breadcrumbs
1/2 cup (120ml) milk
1 egg
1 small onion, finely chopped
1 green bell pepper, diced
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
2 cups (200g) shredded cheddar cheese
1-2 fresh jalapeños, sliced
Instructions:
1. Preheat your oven to 375°F (190°C) and grease a loaf pan.
2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, bell pepper, garlic powder, paprika, salt, and pepper. Mix until well incorporated.
3. Shape the meat mixture into a loaf and place it in the prepared pan.
4. Bake for 40 minutes.
5. Remove from oven, sprinkle shredded cheddar cheese and jalapeño slices on top.
6. Bake for an additional 10-15 minutes, or until cheese is melted and bubbly.
7. Let it rest for 5 minutes before slicing.
