CHICKEN SCAMPI WITH GARLIC PARMESAN RICE
📝𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀👇:
-2 boneless, skinless chicken breasts, sliced into thin strips
-1 teaspoon salt
-1/2 teaspoon black pepper
-3 tablespoons olive oil
-4 cloves garlic, minced
-1 cup chicken broth
-1 tablespoon lemon juice
-1/4 cup fresh parsley, chopped (for garnish)
-1 cup jasmine rice
-2 tablespoons grated Parmesan cheese
-Water as needed for rice
👨‍🍳𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀👇:
𝟭. In a skillet, heat olive oil over medium-high heat. Season the chicken strips with salt and black pepper. Cook for 5-7 minutes, until golden brown and cooked through. Remove from skillet and set aside.
𝟮. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Cook for 2 minutes, scraping up any browned bits.
𝟯. Add chicken broth and lemon juice, and bring to a simmer. Stir the cooked chicken back into the skillet and let it soak up the flavors.
𝟰. Meanwhile, in a saucepan, combine jasmine rice and water (according to package instructions) and bring to a boil. Reduce heat, cover, and let simmer until rice is fluffy and cooked through.
𝟱. Stir in grated Parmesan cheese into the rice before serving. Serve the chicken scampi on a bed of garlic Parmesan rice, garnished with fresh parsley.
