Chocolate Chip Brownie Ice Cream Sandwiches
Ingredients:
For the Brownie Cookies:
– 1 cup unsalted butter, melted
– 1 1/2 cups granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1 cup chocolate chips
For the Ice Cream Filling:
– 2 cups vanilla or chocolate chip ice cream, slightly softened
– 1/2 cup mini chocolate chips
For the Chocolate Coating:
– 1 cup dark chocolate, melted
– 1/4 cup mini chocolate chips for topping
Directions:
1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a mixing bowl, whisk together melted butter and sugar until smooth. Add eggs and vanilla extract, and mix well.
3. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until combined. Fold in the chocolate chips.
4. Drop spoonfuls of the brownie batter onto the prepared baking sheet, shaping them into round cookie-like discs. Bake for 10-12 minutes, or until the edges are set. Let them cool completely.
5. Once cooled, scoop softened ice cream onto one brownie cookie, spreading evenly. Sprinkle mini chocolate chips onto the ice cream layer. Top with another brownie cookie to create a sandwich. Repeat with remaining cookies.
6. Place the ice cream sandwiches on a tray and freeze for at least 2 hours to firm up.
7. Melt the dark chocolate and dip the top of each sandwich into the melted chocolate. While the chocolate is still wet, sprinkle mini chocolate chips over the top.
8. Return to the freezer for another 30 minutes until the chocolate is set.
9. Serve chilled and enjoy!
