Creamy Garlic Butter Shrimp & Asparagus Skillet 



This dish combines succulent shrimp and tender asparagus in a rich garlic butter sauce, perfect for a quick weeknight dinner!
Ingredients:
– 1 lb shrimp, peeled and deveined
– 1 bunch asparagus, trimmed and cut into 2-inch pieces
– 4 tbsp butter (or veg oil)
– 4 cloves garlic, minced
– 1 cup heavy cream
– 1/2 cup chicken stock (or non-alcoholic substitute)
– 1 tsp lemon juice
– Salt and pepper, to taste
– Fresh parsley, for garnish
Directions:
– In a large skillet, melt the butter over medium heat.
– Add the minced garlic and sauté for 1-2 minutes until fragrant.
– Add the shrimp and cook until pink, about 2-3 minutes. Remove shrimp and set aside.
– In the same skillet, add asparagus and cook for 3-4 minutes until tender-crisp.
– Pour in the heavy cream and chicken stock, stirring well to combine.
– Bring to a simmer and let cook for 2-3 minutes until slightly thickened.
– Stir in the lemon juice, salt, and pepper.
– Return the shrimp to the skillet, mixing until well coated.
– Garnish with fresh parsley and serve warm.
