Crispy Chinese Lemon Chicken

Ingredients:
Chicken:
– 1 1/2 lbs chicken breast, cut into bite-sized pieces
– 1/2 cup all-purpose flour
– 1/2 cup cornstarch
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 eggs, beaten
– Vegetable oil, for frying
Lemon Sauce:
– 1/3 cup granulated sugar
– 1/3 cup chicken broth
– 1/4 cup freshly squeezed lemon juice
– 2 tablespoons soy sauce
– 1 tablespoon cornstarch
– 1 tablespoon water
– 1 tablespoon vegetable oil
– 2 teaspoons minced garlic
– Lemon zest from 1 lemon
– Lemon slices and green onions for garnish (optional)

Directions:
1. In a large bowl, combine flour, cornstarch, baking powder, salt, and pepper. Dip the chicken pieces into the beaten eggs, then coat them in the flour mixture.
2. Heat vegetable oil in a large skillet or wok over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through, about 5-6 minutes per batch. Drain on paper towels and set aside.
3. In a small bowl, whisk together sugar, chicken broth, lemon juice, soy sauce, cornstarch, and water until the sugar and cornstarch are dissolved.
4. In the same skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
5. Pour in the lemon sauce mixture and cook, stirring constantly, until the sauce thickens and becomes glossy, about 2-3 minutes.
6. Add the fried chicken back into the skillet, tossing to coat the chicken pieces evenly with the lemon sauce. Cook for an additional 2-3 minutes until heated through.
7. Garnish with lemon zest, lemon slices, and green onions if desired. Serve immediately over steamed rice.
