Crispy Potato Pockets
Ingredients:
2 large potatoes, boiled and mashed
1/2 cup shredded cheese (cheddar or mozzarella)
1/4 cup cooked bacon bits (optional)
1/4 cup chopped green onions
1 tsp garlic powder
Salt and pepper to taste
1 sheet puff pastry (or store-bought dough)
1 egg (for egg wash)
Olive oil for frying
Preparation:
Preheat the oven to 375°F (190°C). Roll out the puff pastry and cut it into squares.
In a bowl, mix the mashed potatoes, cheese, bacon bits (if using), green onions, garlic powder, salt, and pepper.
Place a spoonful of the potato mixture in the center of each pastry square. Fold the pastry over to create a pocket and seal the edges by pressing with a fork.
Brush each pocket with a beaten egg for a golden finish.
Place the pockets on a baking sheet and bake for 20-25 minutes, or until golden brown and crispy.
Optionally, fry the pockets in hot olive oil for an extra crispy texture.
