Ingredients

For the Onions:
4 tablespoons salted butter
3–4 large sweet onions, sliced (yellow or Vidalia work best)
For the Meatloaf:
1 pound ground beef (lean or regular)
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
1 cup breadcrumbs
Additional Ingredients:
1 cup shredded Swiss cheese
Optional: Fresh parsley or additional Swiss cheese for garnish
Step-by-Step Instructions
Step 1: Caramelize the Onions
In a skillet over medium heat, melt the butter.
Add the sliced onions and cook for 15–20 minutes, stirring occasionally, until golden brown and caramelized.
Set aside to cool slightly.
Step 2: Prepare the Meatloaf Mix
In a mixing bowl, combine ground beef, breadcrumbs, salt, black pepper, garlic powder, and onion powder.
Mix gently with hands or a fork until just combined—do not overmix to keep the meatloaf tender.
Step 3: Assemble in the Crockpot
Lightly grease the bottom of the slow cooker with cooking spray or oil.
Place half of the caramelized onions at the bottom.
Shape the meatloaf mixture into a log and place it on top of the onions.
