Ingredients

  • 1 lb ground beef
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced pickles (dill or sweet, depending on preference)
  • Salt and pepper, to taste
  • 1 tube refrigerated pizza dough (about 13.8 oz)
  • 1/4 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Ketchup and mustard (for dipping)

Instructions

1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

2. Cook the Ground Beef:
In a skillet over medium heat, cook the ground beef until browned and fully cooked through, breaking it into small pieces with a spatula. Drain any excess grease. Season with salt and pepper to taste. Remove from heat and let cool slightly.

3. Prepare the Filling:
In a mixing bowl, combine the cooked ground beef, crumbled bacon, shredded cheddar cheese, and diced pickles. Mix well to evenly distribute the ingredients.

4. Roll Out the Pizza Dough:
Unroll the refrigerated pizza dough on a clean surface. Cut the dough into 8 equal rectangles (slice lengthwise first, then widthwise).

5. Assemble the Rollups:
Place about 2 tablespoons of the beef mixture onto one end of each rectangle. Roll the dough tightly around the filling, sealing the edges by pinching them together. Place the rollups seam-side down on the prepared baking sheet, spacing them evenly apart.

6. Make the Garlic Butter Sauce:
In a small bowl, mix the melted butter, minced garlic, and chopped parsley. Stir until well combined.

7. Brush with Garlic Butter:
Brush the tops of the rollups generously with the garlic butter mixture. This will give them a golden, flavorful crust.

8. Bake the Rollups:
Bake in the preheated oven for 15–18 minutes, or until the dough is golden brown and the cheese inside is melted.

9. Garnish and Serve:
Sprinkle additional chopped parsley on top for garnish. Serve warm with ketchup and mustard on the side for dipping.

Tips for Success

  • Customize Your Fillings: Add diced onions, jalapeños, or sautéed mushrooms to the beef mixture for extra flavor.
  • Cheese Options: Swap cheddar for pepper jack, mozzarella, or a blend of cheeses for variety.
  • Make Ahead: Assemble the rollups ahead of time, cover them, and refrigerate until ready to bake. Add a couple of extra minutes to the baking time if starting cold from the fridge.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 350°F (175°C) for 5–10 minutes to restore crispiness.
