Gordo’s Taco Pasta
1 lb. Ground Beef
1/2 Medium Onion, diced
1/2 Bell Pepper, diced
1 cup salsa
3 cups (8 oz.) Medium Pasta Shells, uncooked
1 oz Taco Seasoning
4 cups Beef Broth
1 cup Gordo’s Cheese Dip, any variety
Salt and pepper to taste
1 Green onion, sliced
Directions:
Brown beef over medium heat in a large deep skillet or dutch oven.
Add onions and peppers to the beef. Stir and cook for five minutes.
Drain oil from the pan.
Add pasta shells, taco seasoning, and salsa and stir.
Add beef broth, cover and bring to a boil (about five minutes).
When it starts boiling, remove the lid and cook on medium for 10-12 minutes or until shells are tender and the liquid has reduced. Stir the mixture every few minutes.
Add Gordo’s Cheese Dip and mix until all of the cheese dip has melted.
Turn off the heat and let sit for 5 minutes before serving. Sprinkle with green onions.
Extra cheesy: Heat one half cup of Gordo’s Cheese Dip in the microwave until hot and pour over the whole dish or as desired.
