Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce

Ingredients:
– 2 lbs boneless, skinless chicken breasts or thighs
– 1 tablespoon olive oil
– 1 teaspoon paprika
– 1/2 teaspoon garlic powder
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon cayenne pepper (optional)
– 1 lime, juiced

For the Creamy Garlic Sauce:
– 1/2 cup mayonnaise
– 1/4 cup sour cream
– 2 cloves garlic, minced
– 1 tablespoon lemon juice
– 1 teaspoon Dijon mustard
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper

For the Bowls:
– 1 pound broccoli florets, steamed or roasted
– 2 cups cooked rice or quinoa
– Lime wedges, for serving

Directions:
1. Prepare the Chicken:
1.1. Preheat your grill or grill pan over medium-high heat.
1.2. In a bowl, mix olive oil, paprika, garlic powder, salt, black pepper, cayenne pepper, and lime juice.
1.3. Coat the chicken with the marinade and let it sit for 10-15 minutes.
1.4. Grill the chicken for about 6-7 minutes per side, or until fully cooked through.

2. Make the Creamy Garlic Sauce:
2.1. In a small bowl, combine mayonnaise, sour cream, minced garlic, lemon juice, Dijon mustard, salt, and black pepper.
2.2. Mix well until smooth and creamy.

3. Assemble the Bowls:
3.1. Divide the cooked rice or quinoa among serving bowls.
3.2. Top with grilled chicken and steamed or roasted broccoli.
3.3. Drizzle the creamy garlic sauce over the bowls.
3.4. Serve with lime wedges on the side for an extra burst of flavor.
