Hawaiian Banana Bread with Coconut and Pineapple

Ingredients
For the Banana Bread: 1 ripe banana, mashed
1 cup granulated sugar
2 large eggs
20 oz crushed pineapple, drained
¼ cup shredded coconut
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
½ cup unsalted butter, melted
Instructions
Prepare the Batter
• Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
• In a bowl, whisk together flour, baking soda, and salt.
• In another bowl, mix mashed banana, sugar, eggs, and vanilla extract until smooth.
• Stir in crushed pineapple, shredded coconut, and melted butter.
• Gradually fold the dry ingredients into the wet mixture until just combined.
Bake the Bread
• Pour the batter into the prepared loaf pan.
• Bake for 50-55 minutes, until golden brown and a toothpick inserted in the center comes out clean.
• Let cool in the pan for 10 minutes, then transfer to a wire rack.
