1 ½ cups shelled pistachios (unsalted)
2 cups heavy cream
1 cup whole milk
¾ cup sugar
4 egg yolks
1 tsp vanilla extract
A pinch of salt
A few drops of green food coloring (optional)
Instructions:
Blend the Pistachios:
Grind 1 cup of pistachios into a fine paste. Save the remaining ½ cup for garnish. Make the Ice Cream Base:
Heat milk, cream, sugar, and salt in a saucepan until warm. In a separate bowl, whisk egg yolks. Gradually pour the warm mixture into the yolks while whisking. Return to the saucepan and cook on low heat until thickened. Add the Pistachios:
Stir in the pistachio paste and vanilla extract. Strain the mixture for a silky texture, then chill in the fridge for 4 hours or overnight. Churn & Freeze:
