Ingredientsย ๐Ÿ›’:

2 cups (480ml) heavy creamย ๐Ÿงด
1 cup (240ml) whole milkย ๐Ÿฅ›
ยพ cup (150g) granulated sugarย ๐Ÿš
1 vanilla bean (or 2 tsp pure vanilla extract)ย ๐Ÿฆ

1. Prepare the vanilla base:

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar.ย ๐Ÿงด๐Ÿฅ›๐Ÿš
Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the saucepan. (If using vanilla extract, skip the bean and add it later.)ย ๐Ÿฆ
Heat the mixture over medium heat, stirring occasionally, until it begins to steam, but donโ€™t let it boil.ย ๐Ÿ•ฐ๏ธ
2. Whisk the egg yolks:

In a separate bowl, whisk the egg yolks and a pinch of salt until smooth and light.ย ๐Ÿฅš๐Ÿง‚
Gradually pour a small amount of the hot cream mixture into the egg yolks, whisking constantly to temper the eggs.ย ๐Ÿณ

3. Cook the custard:

4. Strain and chill:
