Honey Sesame Chicken

Honey Sesame Chicken
Ingredients
For the Chicken:
1 ½ lbs boneless, skinless chicken breasts, cut into 1-inch cubes
½ cup cornstarch
2 large eggs, beaten
½ cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon garlic powder
Vegetable oil, for frying
For the Sauce:
½ cup honey
¼ cup soy sauce (low sodium recommended)
¼ cup ketchup
2 tablespoons rice vinegar
1 teaspoon sesame oil
1 teaspoon minced garlic
1 teaspoon minced ginger
1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
For Garnish:
1 tablespoon toasted sesame seeds
2 green onions, sliced
Directions
1️⃣ Prepare the Chicken: In a bowl, mix the flour, salt, black pepper, and garlic powder. In a separate bowl, add the beaten eggs. Place the cornstarch in a third bowl.
2️⃣ Coat the Chicken: Toss the chicken pieces in cornstarch, dip them into the egg mixture, then coat them with the flour mixture. Shake off excess and set aside.
3️⃣ Fry the Chicken: Heat about 2 inches of vegetable oil in a large skillet or deep fryer to 350°F (175°C). Fry the chicken in batches for 3-4 minutes, until golden brown and crispy. Drain on a paper towel-lined plate.
4️⃣ Make the Sauce: In a saucepan over medium heat, whisk together honey, soy sauce, ketchup, rice vinegar, sesame oil, garlic, and ginger. Bring to a simmer. Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.
5️⃣ Coat the Chicken: Toss the fried chicken pieces in the sauce until fully coated.
6️⃣ Garnish and Serve: Sprinkle with toasted sesame seeds and sliced green onions. Serve hot over steamed rice or with stir-fried vegetables.
