Meatloaf with Mashed Potatoes

Ingredients:
For the Meatloaf:
1½ pounds ground beef (85% lean)
1 egg
1 cup breadcrumbs
1/2 cup milk
1/2 cup finely chopped onion
2 cloves garlic, minced
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
For the Glaze:
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon Dijon mustard
For the Mashed Potatoes:
2 pounds Yukon Gold potatoes, peeled and cubed
4 tablespoons unsalted butter
1/2 cup whole milk (warm)
Salt and pepper to taste
Directions:
Preheat oven to 375°F (190°C).
In a large bowl, combine ground beef, egg, breadcrumbs, milk, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined.
Shape into a loaf and place in a baking dish or on a lined baking tray.
In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard for the glaze.
Spread half the glaze over the meatloaf. Bake for 40 minutes.
Remove from oven, spread remaining glaze on top, and bake for another 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
Meanwhile, boil potatoes in salted water until fork tender, about 15–20 minutes.
Drain and mash with butter, warm milk, salt, and pepper until creamy and smooth.
Let meatloaf rest 10 minutes before slicing. Serve with mashed potatoes and optional fresh parsley for garnish.
