Layers of cool mint chocolate chip ice cream, a crunchy chocolate cookie crust, and a rich chocolate ganache—this frozen dessert is a chocolate-mint lover’s dream! 😍

🍰 Ingredients:

For the Chocolate Cookie Crust:
✅ 2 cups crushed chocolate cookies (Oreos work great!)
✅ ¼ cup melted butter

For the Mint Chocolate Chip Ice Cream Layer:
✅ 1 ½ quarts mint chocolate chip ice cream (softened)
✅ ½ cup mini chocolate chips

For the Chocolate Ganache:
✅ 1 cup dark chocolate (chopped)
✅ ½ cup heavy cream

For the Whipped Cream Topping:
✅ 1 ½ cups heavy whipping cream
✅ ¼ cup powdered sugar
✅ ½ tsp mint extract (optional)
✅ A few drops of green food coloring (optional)

For Garnish:
✅ Chocolate drizzle
✅ Chocolate curls or shavings
✅ Fresh mint leaves

✨ Instructions:

1️⃣ Make the Crust:
Mix cookie crumbs with melted butter and press firmly into the bottom of a springform pan. Freeze for 15 minutes.

2️⃣ Add the Ice Cream Layer:
Spread softened mint chocolate chip ice cream evenly over the crust. Sprinkle mini chocolate chips on top. Freeze for at least 4 hours or until solid.

3️⃣ Prepare the Ganache:
Heat heavy cream until simmering, then pour over chopped chocolate. Stir until smooth, then let cool slightly before drizzling over the ice cream layer. Freeze for another 30 minutes.

4️⃣ Whip the Cream:
Beat heavy cream, powdered sugar, mint extract, and food coloring until fluffy. Pipe or spread over the frozen cake.

5️⃣ Decorate & Serve:
Drizzle extra chocolate on top, sprinkle with chocolate curls, and garnish with fresh mint leaves. Let the cake sit for 5 minutes before slicing.
