Moist chocolate cupcakes filled with rich molten dark chocolate and juicy raspberries—each bite melts in your mouth! Ingredients:
For the Cupcakes:
1 cup all-purpose flour
½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup unsweetened cocoa powder
½ cup milk
1 cup fresh raspberries
For the Lava Center:
4 oz dark chocolate, chopped
2 tbsp heavy cream
For Topping (Optional):
2 tbsp powdered sugar (for dusting) Directions:
Preheat & Prep: Heat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
Cream Butter & Sugar: Beat butter & sugar until fluffy. Add eggs one at a time, then mix in vanilla.
Incorporate Cocoa: Stir in cocoa powder until fully blended.
Combine: Alternate mixing in dry ingredients & milk, beginning & ending with dry ingredients. Fold in raspberries.
Prepare Lava Center: Microwave dark chocolate & heavy cream in 30-second intervals, stirring until smooth.
Assemble Cupcakes: Fill liners halfway, add 1 tsp melted chocolate in the center, then top with remaining batter.
Bake: Bake 18-22 minutes until set around the edges but soft in the center.
Cool & Serve: Let cool for 5 minutes, then dust with powdered sugar for an elegant finish.
