No-Bake Cookie Dough Bars
Ingredients:
– 2 cups crushed chocolate sandwich cookies
– 1/2 cup unsalted butter, melted
– 1 cup unsalted butter, softened
– 1 cup brown sugar, packed
– 1/2 cup granulated sugar
– 1/4 cup milk
– 2 teaspoons vanilla extract
– 2 1/2 cups all-purpose flour (heat-treated, see note)
– 1/2 teaspoon salt
– 1 1/2 cups chocolate chips
– 1 cup mini chocolate sandwich cookies (for topping)
Directions:
1. In a bowl, mix the crushed chocolate sandwich cookies with the melted butter until combined. Press the mixture firmly into a parchment-lined 8×8-inch pan to form the base. Place in the refrigerator while preparing the cookie dough layer.
2. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
3. Add the milk and vanilla extract, then mix until smooth.
4. Gradually add the heat-treated flour and salt, stirring until fully combined.
5. Fold in the chocolate chips, then spread the cookie dough evenly over the chilled cookie crust.
6. Press mini chocolate sandwich cookies on top and sprinkle extra chocolate chips for decoration.
7. Refrigerate for at least 2 hours or until firm.
8. Once set, cut into squares and enjoy!
Note: To heat-treat flour, spread it on a baking sheet and bake at 350°F (175°C) for 5 minutes to eliminate any bacteria. Let it cool completely before using.
