No-Bake Marshmallow Slice

Ingredients:

200g (7 oz) digestive biscuits, crushed
100g (3.5 oz) unsalted butter, melted
150g (5 oz) mini marshmallows
1 cup desiccated coconut
1/2 cup sweetened condensed milk
1/4 cup cocoa powder
1 teaspoon vanilla extract
Directions:

Start by crushing the digestive biscuits into small pieces. You can do this by placing them in a ziplock bag and gently crushing them with a rolling pin or using a food processor for a finer texture.

In a medium bowl, combine the crushed biscuits, desiccated coconut, and cocoa powder. Mix well until everything is evenly distributed.

Melt the unsalted butter in a saucepan over low heat or in the microwave. Once melted, add the sweetened condensed milk and vanilla extract. Stir until well combined.

Pour the butter and condensed milk mixture into the dry ingredients. Mix until everything is evenly coated and the mixture starts to come together.

Add in the mini marshmallows and gently fold them through the mixture, being careful not to break them apart too much.

Line a square or rectangular baking dish with parchment paper. Transfer the mixture into the dish, pressing it down evenly with the back of a spoon or your hands.

Refrigerate the slice for at least 2 hours, or until it sets firmly.

Once set, remove from the fridge and cut into squares or bars.

Serve chilled and enjoy your delicious, no-bake marshmallow slice!
