Purple Velvet Cake Recipe
Ingredients:
For the Cake:
2 ½ cups (310g) all-purpose flour
2 tbsp (15g) cocoa powder
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup (230g) unsalted butter, softened
2 cups (400g) granulated sugar
4 large eggs
1 tbsp vanilla extract
1 cup (240ml) buttermilk
1 tbsp white vinegar
Purple food coloring (as needed)
For the Frosting:
8 oz (225g) cream cheese, softened
½ cup (115g) unsalted butter, softened
4 cups (500g) powdered sugar
1 tsp vanilla extract
2 tbsp heavy cream (optional, for consistency)
Instructions:
1. Preheat Oven & Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch (23cm) cake pans.
2. Mix Dry Ingredients: In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
3. Cream Butter & Sugar: In a large mixing bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
4. Add Buttermilk & Color: Mix buttermilk with vinegar and add purple food coloring until you reach the desired shade. Alternately add dry ingredients and buttermilk mixture to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
5. Bake: Divide the batter evenly between the cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cakes cool in the pans for 10 minutes before transferring to a wire rack.
6. Make Frosting: Beat cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy. If needed, add heavy cream for a smoother consistency.
7. Assemble & Frost: Once cakes are completely cool, spread frosting between layers and over the top and sides.
