Ingredients:
1 loaf French bread, sliced lengthwise
1/2 lb crawfish tails, drained
1/2 lb shrimp, peeled and chopped
4 oz cream cheese, softened
1/2 cup mayonnaise
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 cup diced bell pepper
1/2 cup diced onion
2 cloves garlic, minced
1 teaspoon Cajun seasoning
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (optional)
Directions:
Preheat oven to 375°F. Line a baking sheet with foil. In a skillet, sauté onion, bell pepper, garlic, shrimp, and crawfish tails with a tablespoon of butter until the seafood is cooked through, about 5 minutes. Season with Cajun seasoning, salt, and pepper. In a bowl, mix cream cheese, mayonnaise, the cooked seafood mixture, and half of the mozzarella cheese until blended. Spread the seafood mixture generously over each half of the French bread. Top with the remaining mozzarella cheese. Bake for 15-20 minutes until the cheese is bubbly and golden. Sprinkle parsley over the top before slicing and serving warm.
