Still my favorite after five years—this pot roast NEVER disappoints! 😋

Low-Carb Coca-Cola Pot Roast 🍽️

Ingredients:
• 3 lb beef chuck roast
• Salt & pepper to taste
• 2 tbsp olive oil
• 1 onion, chopped
• 3 garlic cloves, minced
• 1 cup beef broth
• 12 oz sugar-free Coca-Cola
• 2 tbsp Worcestershire sauce
• 1 tsp dried thyme
• 1 tsp dried rosemary
• 2 cups baby carrots
• 2 cups sliced mushrooms

Instructions:
1️⃣ Season the roast with salt and pepper. Sear in olive oil until browned on all sides.
2️⃣ Place the roast in your slow cooker.
3️⃣ Sauté onions and garlic, then add broth, Coca-Cola, Worcestershire sauce, thyme, and rosemary.
4️⃣ Pour the sauce over the roast, add carrots and mushrooms.
5️⃣ Cook on low for 8-10 hours until melt-in-your-mouth tender.
6️⃣ Serve with the flavorful juices and veggies.
