Ingredients
For the Crust:
2 cups crushed Nilla Wafers
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
24 oz cream cheese, softened
1 cup granulated sugar
1/4 cup sour cream
1 tsp vanilla extract
3 large eggs
1 ripe banana, mashed
1/2 cup strawberry puree (blend fresh or frozen strawberries)
For the Banana Pudding Layer:
1 box (3.4 oz) instant banana pudding mix
1 3/4 cups cold milk
For the Strawberry Sauce:
1 cup fresh strawberries, diced
1/4 cup granulated sugar
1 tsp cornstarch
1 tbsp water
For the Whipped Cream Topping:
1 cup heavy cream
2 tbsp powdered sugar
1 tsp vanilla extract
Directions
1. Prepare the Crust:
Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
In a bowl, mix the crushed Nilla Wafers, sugar, and melted butter until well combined.
Press the mixture firmly into the bottom of the pan and bake for 10 minutes. Let cool.
2. Make the Cheesecake Filling:
In a large bowl, beat the cream cheese and sugar until smooth and creamy.
Mix in the sour cream, vanilla extract, mashed banana, and strawberry puree.
Add the eggs one at a time, mixing on low speed until fully incorporated.
Pour the filling over the cooled crust.
3. Bake the Cheesecake:
Place the springform pan on a baking sheet and bake for 50–60 minutes, or until the edges are set and the center is slightly jiggly.
Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
Refrigerate for at least 4 hours or overnight.
4. Prepare the Banana Pudding Layer:
In a bowl, whisk together the instant banana pudding mix and cold milk until thickened.
Spread the pudding evenly over the chilled cheesecake.
5. Make the Strawberry Sauce:
In a small saucepan, combine the diced strawberries, sugar, and cornstarch mixed with water.
Cook over medium heat, stirring constantly, until the mixture thickens. Let cool completely.
6. Prepare the Whipped Cream Topping:
Beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
7. Assemble the Cheesecake:
Spread or pipe the whipped cream over the banana pudding layer.
Drizzle the strawberry sauce on top and garnish with fresh strawberries and banana slices if desired.
