Strawberry Cheesecake Crumbl Cookies 🍓🍰🍪

Ingredients:

For the Cookies:
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 cup graham cracker crumbs
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

For the Cheesecake Filling:
8 oz cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract

For the Strawberry Swirl:
1/2 cup strawberry jam
1 teaspoon cornstarch

Directions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, beat butter, brown sugar, and granulated sugar until creamy.
Add eggs and vanilla extract, mixing until combined.
In a separate bowl, whisk together flour, graham cracker crumbs, baking powder, baking soda, and salt. Gradually mix into the wet ingredients until a soft dough forms.
In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
In a small saucepan, heat strawberry jam and cornstarch over low heat until thickened. Let cool.
Scoop large portions of cookie dough and flatten slightly. Add a teaspoon of cheesecake filling in the center, then fold the dough over to seal.
Place cookies on the prepared baking sheet and bake for 12-14 minutes or until golden brown.
Let cool, then drizzle with the strawberry swirl before serving.

Tips:
