Stuffed Chicken with Spinach and Cream Cheese Recipe
This creamy, cheesy, and flavorful stuffed chicken is a delicious and elegant dish that’s surprisingly easy to prepare. Perfect for a weeknight dinner or a special occasion!
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 8 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese (optional)
Instructions:
Step 1: Prepare the Filling
- In a mixing bowl, combine the softened cream cheese, shredded mozzarella cheese, chopped spinach, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Mix until all ingredients are evenly incorporated. Set the filling aside.
Step 2: Prepare the Chicken Breasts
- Preheat your oven to 375°F (190°C).
- Place each chicken breast on a cutting board. Using a sharp knife, carefully slice a horizontal pocket into the thickest part of each chicken breast, being careful not to cut all the way through. You want to create a “pocket” to hold the filling.
- Season the outside of the chicken breasts lightly with salt, pepper, and additional Italian seasoning if desired.
Step 3: Stuff the Chicken
- Spoon an equal amount of the spinach and cream cheese mixture into each chicken breast pocket. Be generous but ensure the filling doesn’t overflow.
- If desired, sprinkle a little grated Parmesan cheese over the top of each stuffed chicken breast for extra flavor and a golden crust.
Step 4: Sear the Chicken
- Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
- Carefully place the stuffed chicken breasts in the skillet, seam-side up, and sear for 2-3 minutes on each side until golden brown. This step helps seal in the filling and adds flavor.
Step 5: Bake the Chicken
- Transfer the skillet to the preheated oven (or transfer the chicken to a baking dish if your skillet isn’t oven-safe).
- Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the filling is hot and bubbly.
Step 6: Rest and Serve
- Remove the chicken from the oven and let it rest for 5 minutes before serving. This allows the juices to redistribute and ensures the filling stays intact when sliced.
- Garnish with additional Parmesan cheese or fresh herbs like parsley if desired.
Serving Suggestions:
- Serve the stuffed chicken alongside roasted vegetables, mashed potatoes, or a fresh salad.
- Drizzle a little balsamic glaze over the chicken for an extra touch of elegance.
Enjoy!
This Stuffed Chicken with Spinach and Cream Cheese is sure to be a crowd-pleaser. The combination of creamy, cheesy filling with tender chicken makes it a comforting yet sophisticated meal.
