Triple Chocolate Cake
Ingredients:
1ยฝ cups all-purpose flour
1ยฝ cups granulated sugar
ยพ cup unsweetened cocoa powder
1ยฝ tsp baking soda
1 tsp baking powder
1 tsp salt
2 large eggs
1 cup whole milk
ยฝ cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
1 cup semi-sweet chocolate chips
For the Ganache:
8 oz dark chocolate, chopped
1 cup heavy cream
Directions:
Preheat the oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans.
In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing until fully incorporated.
Slowly add the boiling water to the batter, mixing until smooth (the batter will be thin).
Stir in the semi-sweet chocolate chips.
Bake the cake: Divide the batter evenly between the two prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Prepare the ganache: Place the chopped dark chocolate in a heatproof bowl. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Pour the hot cream over the chocolate and let it sit for 2-3 minutes, then stir until smooth and glossy.
Once the cakes are completely cool, spread a layer of ganache on top of one cake. Place the second cake on top and cover the entire cake with the remaining ganache.
