Walking Taco Casserole
A fun and flavorful twist on traditional tacos!
Ingredients
– 1 lb ground beef or turkey
– 1 cup chopped onions
– 1 can 15 oz black beans, drained and rinsed
– 1 can 15 oz corn, drained
– 1 can 10 oz diced tomatoes with green chilies
– 1 packet taco seasoning
– 2 cups tortilla chips, crushed
– 2 cups shredded cheddar cheese
– 1 cup sour cream
– 1 cup shredded lettuce
– Sliced jalapeos optional
Directions
– Preheat your oven to 350F 175C.
– In a large skillet, brown the halal ground beef or turkey with chopped onions over medium heat.
– Stir in black beans, corn, diced tomatoes, and taco seasoning. Cook for 5-7 minutes until heated through.
– In a baking dish, layer half of the crushed tortilla chips at the bottom.
– Spread the meat mixture evenly over the chips, then sprinkle half of the cheese on top.
– Add the remaining tortilla chips and top with the remaining cheese.
– Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
– Remove from the oven and let it cool slightly. Top with sour cream, shredded lettuce, and jalapeos if desired.
– Serve hot and enjoy your walking taco casserole!
